Outcome: I used baking soda instead of bakers ammonia, as I didn’t have the latter on hand. The cookies likely came out a bit less fluffy, but were of sufficient quality for my purposes.

Attempting three sandwiches, as it turns out PhD students can't live of just coffee, cookies and cake

Outcome: WARNING HAZARDOUS! This protocol calls for the use of uncooked chicken and pork. Together with my PI, we decided to abort, as the product would have been dangerous to eat.
